maybe they don't care to much about that, most pushed-in-git changes are other things (pdf is not the only format they do) but the plenty dependencies make that i am not too motivated to look into fixing the pdf bits (basics are there)

The 2 editors have demo versions, I don’t know what you can do with them. I’ve a license of PDF Studio Pro (since it’s the only tool besides Acrobat Pro that can check & convert PDF/X).

Apple’s Preview allows to include a manual signature. I would be surprised if that counted as a valid digital signature.
Apparently Wondershare, PDFgear, and Sejda do the same.

with all these tech companies pleasing dictators soon there is little untainted hard- and software for me to choose from ... so i can't check apple

that's the point: the tex/pdf world is basically not interesting and/or considered as there is money to be made elsewhere (has always been the case with pdf) which then involves marketing and who likes that

which is why in the end we need to keep tex a bit invisible .. away for the competing markets .. not distraction .. so we just support/adapt-to what is needed, e.g. wrt signing and move on
