Now I'm wondering if it's postfix, I can telnet to port 25 but I can't send any commands. Shouldn't I be able to type "EHLO" or HELP, etc. once connected via telnet to port 25?
Yes, you should... did you try to bind the postfix on 0.0.0.0? I´m not sure but I think a I had an similar issue which has been solved not to bind to a specific IP but on all IP´s...
