Good idea to save it - it's expensive to buy - healthier than pork of beef fat, but not as healthy as olive and other vegetable oils. Tastes really good though. There's a bar/restaurant in the east side of Milwaukee (The Horny Goat, if anyone's interested) that does their french fries in duck fat.
