HDR and panorama functions don't do anything for me whatsoever. I don't
use face recognition or GPS info because I know who it is and where I am
most of the time.
Having said that, I use LR Classic and gladly pay the monthly because
it's as much a part of my photography as my cameras, electricity, and
bills for studio time, and my income is likely at this point in time
more uncertain than yours.
99% of my editing is LR, with the periodic visit to PS for layers or a
more molecular edit if necessary, maybe a content-aware fill here and
there, but the cataloging function and workflow ecosystem of LR is
arguably more important to me.
I can't tell you what features of the program are going to be important
enough to you to justify the cost. I can say that a few bucks a month is
easier for me to cover than the full price package, so I live with it in
order to stay functional and on top of the very many moving parts of my
current work.

Are there any absolutely must have features of the current lightroom that would
make it worth $120 per year? Mind you I have practically no interest in photo
shop, certainly not enough to pay any extra for it.
Side question. I’ve got what I want on an external drive and I’d love to just
copy that over, but if I boot off the external drive, migration assistant won’t
seem to just transfer everything to the recently formatted internal drive, so
I’m doing the long slow installation of High Sierra, which is going to take 2
hours, before I can even start the copy of data off the external drive.
Is there a quicker way to do this that I’m missing?
