I have read this document already (and more than once), in particular
http://www.postfix.org/ADDRESS_REWRITING_README.html#receiving

I wouldn't have posted such questions, if I hadn't spent many hours by
myself trying to solve my issues :(

This document states:
"Postfix never rewrites message header addresses from remote SMTP
clients when the remote_header_rewrite_domain parameter value is empty
(the default setting)."

(with an introduction containing: "Message header address rewriting is
frowned upon by mail standards,").

I did *not* define remote_header_rewrite_domain anywhere, yet the
recipient is being rewritten. Unless I misread how this configuration
parameter actually works.

Forgot to add that I'm using postfix 2.5.5
