I think I might have identified the problem. Apparently in some situations 
SASLauthd can produce memory leaks. This is what I've gathered from other 
people's posts. 

Now I'm not certain if this is what was causing my particular issue (too soon 
to tell), but it's worth checking out.

I noticed that the RAM usage on my mailserver seemed to continually grow over 
time, and the date when the authentication issues arose, seem to coincide with 
the ram usage growing beyond the upper limit of the Server's resources.

Anyways, I added the "-c" parameter to my saslauthd options. This is supposed 
to cache the authentication credentials. So far, my ram usage seems to stay 
more or less constant.

It's still too early to tell if this solved it or not. Since my issue is very 
sporadic. But I thought I'd just mention it, in case someone here has similar 
issues.
