When you say "can't delete it" do you mean that it is now permanently in
the To field?  Or do you mean that you can remove it but it keeps coming
back every time you start to enter a name that begins with the same letter?

If the latter, you are most likely seeing the effects of the PowerMail
Address history.  To get rid of this, do the following:

1)  Go to Preferences / Address Book
2)  Find the line that says:  "Remember recipients for..."
3)  Click on the "Clear" button
4)  Uncheck the box beside the "Remember recipients for..."  for a
PERMANENT fix.
