It's an attitude: "We are more concerned with quality and specialty than with price, and you should be, too." I kind of understand it, and it kind of bothers me, too. If you put a price on something, most will look at the price and move on, but if you don't they may take a look at the unique specialty item for 20 seconds longer, long enough for a salesperson to engage them in conversation. Also, not putting a price on something makes merchandising so much easier and more flexible: You can change the price of an item in the inventory system and it reflects immediately without having to go to the sales floor and change price tags and/or signs.
