Hi Troy, Thank you very much for the link, it is now very clear the last ATI aren't actually the way to go for OpenCL.
This page is listing the cards that support OpenCl with Snow Leopard : Apple - Mac OS X Snow Leopard - Technical specifications But it looks like it is not really up-to-date or perhaps optimistic.
