Like most here, I like the look of saddlebags. There are two "con" issues 
for me with them: 

1) weight is high on the frame.
2) they are really inconvenient to attach/detach 
3) I'm not gonna leave a $200 bag on a bike. 

Panniers are simply easier. 

1) They attach/detach in seconds. 
2) They have handles or shoulder straps for errand-running.
3) Weight is lower. (Mine do not rattle.)

I went with a Tubus/Ortlieb setup. The rack and bags are engineered for one 
another. The rack is also engineered for B&Ms Topline rear lights, which is 
an essential feature for me. I prefer the older Ortleib Classic rollers. 
The material is easily wiped clean with a sponge. I bought the h-viz 
reflective fabric option for my boys who both commute at night. Hi-Viz 
works as advertised, but is less easily cleaned. 

I get the romance of canvas and leather, but my need is visibility. My bags 
are bright yellow. And I gotta have that Topline rear light.
