I asked Brooks about thicknesses. 

Steven Green, factory manager who has been with Brooks for almost 40 years 
responded: 





*There is absolutely no truth in this at all! We have always specified, to 
my knowledge, 5.5mm to 6 mm as the target thickness.  We do occasionally 
receive leather outside of these parameters and we allow a minimum of 4.8 
mm and a maximum 6.5 mm Unfortunately, cows are such inconsiderate beasts 
and they won’t come to an agreement with Brooks to always give us exactly 
5.5 mm!*
