David you will get many different perspectives on gearing because we are all unique and think our gearing approaches work well and wish to share that joy. I have several bikes with comparable gearing as you propose and it perfectly meets my needs in the Midwest and surprisingly hilly Michigan locales. Also STI should be fine from again my own perspective. Some are sure to disagree other may agree. Enjoying reading everyone’s perspectives. Thanks for sharing you build plans with the group.
