Hi! To me it seems you're right at the spot where there's no clear winner without considering various factors.
If you like high bars (say, 2-3cm or more above the saddle) and intend to avoid truly rugged terrain, I'd say the 60cm would be the default choice. If you like lower-than-that bars or ride in the hooks or want to accommodate rough stuff or have short arms or intend to ride thinly- shod a lot, then I'd say the 56cm would work better. Of course, if you get a chance to straddle a 60cm set up roughly "your way", you'll know one way or the other pretty quickly. I'm 6' tall, have a 90 PBH, like *very* high bars (5-10 cm above the saddle), ride bad roads and "improved" trails (no out-in-the-middle-of- the-field or boulder-skipping stuff), use 700x40 or 700x38 tires @60-70psi, and *never* let the weather stop me (the 700x40 tires have 240 studs). My 60cm Sam is near perfect. A 61cm would certainly be even better. A 62 would work either even better or not at all. The 64cm is definitely a no-go. Here are various pictures of my bike. I do like my handlebars high. But the frame felt fine for me even with the Bullmoose 150mm bars as pictured. (I lately have chosen to ride with those bars on the RBW- sold steerer extender. That is a *sweet* ride! But I'll switch 'em back some too.) (Try to ignore the "rampant" look in the photos. I've since cut the kickstand down a bit.
