The original Dura-ace SIS was six speed. A friend still has his mid-1980s Colnago with that component group on it.
And I still have a pair of Suntour Superbe Pro DT shifters that can index either six or seven speed (you turn a tab on the outside of the shifter mount to the setting you want).
