You should probably take a look at the Beginner's Guide at wiki.slimdevices.com, particularly the section on ripping and tagging. AccurateRip isn't a ripper -- it's a component that ripping programs can use to verify that others have gotten the same rip results, thus increasing your confidence that your rip was good. AccurateRip is an integral part of dBpoweramp, and easy to add on to EAC. Also, RG is replay gain -- wikipedia has a good layman's description, and there's tons more detail available on the Hydrogen Audio forums.
While you can't easily compare your CDP and FLAC using the same DAC, it's dead easy to compare WAV and FLAC. Try that, with RG turned off, and see if you really hear a difference between WAV and FLAC.
