Angie had wanted to make a roast goose so I tried to pluck one. I worked on it 
for maybe 30 minutes and was left with another hour of work. There were tiny 
feather stubs that went through the skin. In the end I skinned it, got most of 
the meat off and maybe I'll try again next time...

was terribly overcooked,
I tried a faux smoker technique on the gas grill a couple months ago but the 
ducks were small and I overcooked them:

Ding, Randy gets the award!

Canada goose shot last Saturday.

The meat is way more like red meat then any other poultry. Angie sears it in a 
cast iron pan and then finishes it in the oven. These breasts were from an 
older goose so they were kinda tough. We should have pounded them a little 
before cooking.

A lot of people don't like the flavor of goose but it's because they overcook 
it. These were a little more rare than we normally do but it's much better to 
go a little rare than to ruin the meat.

A few weeks ago I put a bunch of goose legs in the slow cooker and made tacos. 
The meat gets really tender after 4 hours simmering.

Around here, I swear people must be listening to the police scanners
to get dibs on road kill deer. They don't care about internal
bleeding, embedded glass, or metal shards. My sister hit a deer and 10
minutes after the cops showed up, 3 different groups of people in
pickups with knives at the ready showed up asking for the meat. She
wanted it and was told by the cops she better hurry and get it in the
trunk. She gets first dibs, but she can give it to someone at the
scene. If unclaimed it is supposed to be donated to the local food
bank (actually a well organized group of warehouses that distribute
food to non-profits), but the cop says they never last that long. As
soon as he turns his back, it's gone.

Had an opportunity for a whole Moose a few years back but we were in the car 
and wife didn't feel up to lifting her
end of the Moose into the trunk.
Poor thing must have been hit in the night by a big truck as there was no 
wrecked car nearby and not a mark on the
Moose. It was just lying on the side of the road like it was asleep.
