It's a long story, but suffice it to say that I'm stuck on a rather restricted
diet for the next week, and I've already been on it for five days. Basically, I
can only have soft things (cooked pasta, mashed potatoes, oatmeal, rice
pudding, custards, that kind of thing) and nothing wit

Here's my favorite of all time pasta sauce. If it's too chunky, you
could just puree it with an immersion blender, and all of the butter
mellows any acidity the tomatoes may have started with!
Quintessential Tomato Sauce
Use fresh tomatoes, but you can make
process by mincing the cabbage very fine.
Those are some ideas. Hope it goes well.

Or cook the beans Caribbean style
1/3 c olive oil (canola will do)
In your case I would chopped up what ever veggies you can eat fine, like
carrots, celery, and whatever.
Make sure you soak your beans for a minimum of 8 hours to break down the
Anti-Nutrients in the bean for easier digestion.
