I am currently running FC8 w/MythTV, but it does not appear to be geared for how I want to use it at this time, so I want to give freevo a shot. I am able to start freevo up successfully, however when I go under the watch TV menu, I don't see anyway to just watch / record what is currently playing

Christian, The HDMI port is "digital", so, in theory provides a better signal, your mileage may vary. It appear though that you at least have the the Xorg drivers working with the 3100? Do you simply use the XV driver? Have you tried the XVMC driver too? Are you using the Digital Audio SPDIF
