This geoserver configuration is mainly used serving WMS and WFS from a
postgis DB.
The datastore/layer configuration doesn't change often and we're not
using the REST interface.
I've reloaded the configuration multiple times. Restarted all the
tomcat instances

You can check you disk space. I have this kind of issue when there is no
space on the hard disk :/
We just copy-pasted the empty files from a fresh install of GeoServer to the
GeoServer's project. We had lucky I think because all worked after :)

everything seems fine.
But if I preview the layer (WFS) in Geoserver it throws:

I guess the problem is that both war files are getting deployed to default
directory 'geoserver' which causes a conflict in tomcat. But by renaming the
war file, deployment directory changes also to new war-name.
As a war file is an ordinary zip-archive, you can also: unzip war, rename

there is actually only one file being deployed. I said I had tried it with both
geoserver and geoserver-2.1.2 but I had actually deleted the war file after I
had realised that it didn´t work.

Using Geoserver 2.1.1 on Windows 2008 RC2 Server we experienced some problems
in relocating the folder for GeoWeb Cache.
We followed the instructions found here:
