correctly the advantage is dynamic assignment of processor time (and
bandwidth?).

I've used it at work for production servers ( MSSQL, Exchange, ... ) and it
works like a charm. We're moving to MS Hyper-V starting in Feb 09, not my
decision, and VMWare has always seemed to perform better than MS in the
Virtualization realm.
That being said, I've never done it with game server

I got my install complete about 25 minutes before they released the
linux server... :(
I used vmserver and saw okay performance, but the free vmserver doesn't
handle memory or CPU usage as nice as ESX.
