Regarding the 4 children showing on the Family View, I don't worry about
it. Legacy shows that as an aid, it does not show on any report that I know
of. You could, of course turn off the 1/2 children setting and it would
only show 3 children.

When you do a backup in Legacy by going to File > Backup Family File, you
end up with just one file with a .zip extension.
Those file extensions that you list are files that are associated with the
main .fdb Family File and are included in the backup, if you so choose.

In our family I have kept all the information on my ex (who is now deceased)
and have a very extensive family tree on his side. BUT There are children
involved so I wanted this information for them and the grandchildren. I have

Legacy v7 directly over the Legacy v6 folder.

Well, strictly speaking the answer is you do not HAVE to remove
Legacy 6, but the format used by Legacy 6 and Legacy 7 are different.
Whatever you do in Legacy 6, then Legacy 7 can, and will, convert to
Legacy 7 format. Once the format takes place, Legacy 6 can't open it anymore.
