It is a user choice - user normally have file name extensions of 3
letters and Flac files are usually .flc - you seem to prefer to use
.flac.

MacBook Pro to my Linn Majik system.
Everything is working fine and sounding great.
However I've been busily ripping my CD collection and my Mac's
harddrive is starting to fill up ... I need some external storage!

You can create a custom now playing screen saver using the custom clock
applet (see the third party/ plugins forum for details), but this
sounds like you want to customize something else. When you say "list"
which list are you refering to? From the home menu what have you done

I have applied one of Soundcheck's tweaks to my Touch (I've disabled
FLAC on the Touch and forced mysqueezebox server on the computer to
convert FLAC to PCM). I am very pleased with the results (especially
when playing hi-def 24-bit/94 KHz FLAC, or even 24-bit/44.1 KHz, as in
the Beatles remasters

1) "More info" only shows what SBS thinks the bit rate will be based on
the file on disk - not what it is transcoded to. You can ignore it.
