Finally!
I FINALLY managed to get the iPod Touch (First Generation) to work with
Ubuntu using gtkpod.
When you add songs/albums to gtkpod everything is dandy, same when you
transfer songs to the iPod Touch BUT after you've ejected the iPod Touch
(in gtkpod) the songs don't show up on the iPod
Only problem now is that I can't unmount the iPod (aka: iTouch) as the
user, I have to unmount it as root.
Does:
fusermount -u
work?
It said I had to be in the 'fuse' group, which I am, so I'm not sure
what's wrong there...

Well, iFuse definitely worked! After installing iFuse the iTouch
appeared on the desktop as an iPod.

So you might want to stick to a VM for now, enabling USB passthrough.
Remember to get the download from the website rather than through
apt-get, so you might want to do this before you get to the computer (as
you said that there was no internet, IIRC

filesystem without hacking into the iPhone OS firmware, which has dubious

IIRC there is a way to do it, I used to sync my iphone with amarok. From
memory, (Google will be your friend) the ubuntu package was called
ipod-convenience I think.

Amarok won't work with the iTouch.

A quick look at iTunes 8 (which is needed to sync iPod touches) in the
wine appdb comes up with

. Unfortuantly the reporter says that syncing with iPhones doesn't
work, so I'm also guessing that iPod touches won't either.
Yeah it's a shame that they didn't make it 'more' compatible with Linux
