Hi List,
Let me say right from the start that I'm running iOS 14.8 and have not
upgraded to iOS 15. I'm not sure when I first noticed this on screen
the same keys and layout as before I upgraded to iOS 14.8. Is
anyone familiar with this large button and which default layout it will
switch to if I execute it?

I know folks get used to a particular mail app but I'd recommend you try
Outlook for iOS. I'm still running iOS 14.8 but I'd be curious if the Outlook
app under iOS 15 does the shenanigans you're describing.
