Can anyone give me any pointers on how to get my Mac to talk to an old
rs232 device? I have a usb to rs232 converter but I think I need a
software tool to probe the device. Any suggestions?

You can burn cds but that time consuming and wasteful if you need to
I'm pretty sure that the data DVD's that I've burnt with Toast are
readable by PC I can double check tonight to confirm this though.
