I might be wrong, but I did a bunch of research into the Aussie operators when I was picking a carrier for my Nexus One that came out of a GoogleIO conference.
All Aussie carriers support three bands. I believe Telstra's Next G network is 850Mhz, and the two other common ones. This is also what AT&T uses, so if you've got a handset that is designed to work on Optus, then it will only get EDGE speeds on the AT&T network (that has been my experience when roaming with the Nexus One) I believe Vodafone and Optus have the 900MHz spectrum, plus the two other common ones. This is what T-Mobile uses, and I've experienced much better performance on T-Mobile than on AT&T here with my Optus compatible handset. The iPhone is a different kettle of fish. I would have expected that with Optus pushing it so hard the ones they re-sold would have a 900MHz radio, but perhaps this isn't the case at all, and they're making use of one of the higher frequency spectrums to deliver their 3G service. This might also explain why my friends using iPhones on Optus complain about them having patch data (since the lower the frequency, the more tolerant it is to interference from things like concrete walls and hills between your phone and the base station). So, perhaps for iPhone users, AT&T is your best bet, and if you're using any other handset, stick to the carrier pairing (Telstra = AT&T, Vodafone/Optus = T-Mobile).
