Beyond the Norman Rockwell dreamscape of the idyllic civilization...
Having for several years ground my own flour with sweat and muscle and
made bread the old way in a wood fired mud and stone oven....[or the more
modern version using a 5 gallon steel animal feed molasses can from a
tumbled down barn and some rusty dented stove pipe]
It sounds like consumers that prefer light fluffy bread [ It's a
"WONDER" they call it that] over true fresh whole grain that comes out much
like a very tasty brick with one slice darned nearly a whole meal, which in
3 days is fit to clobber a rabbit with to make a stew to soak that now hard
brick in [with a few rabbit hairs on it ] to soften it up some.
..give us our DAILY bread...the weekly stuff was ammunition. [There are
actual legends about that, using it to win cannon battles...not true, but
to the olde folx of old, believable]
Ya know, you can still buy bulk grain and a hand crank mill and make a
loaf that'll feed you for days for about 5 cents...and you don't even have
to build the oven.
Might take a axe to slice it on the 6th day, though. [ and rest on the 7th ]

It's not really what everyone is using. It's what the mas food
manufacturers mass produced and force fed us in the stores by providing no
alternatives, and people just shrugged and paid for it. When the big
manufacturers first started mass producing food, the food WAS mostly
healthy. But like anything else the manufacturers started trying to cut
corners and increase profits at the expense of the end user. Most of the
unhealthy changes were made without even informing us, the people who buy
and consume the food. And additive free flour is not a specialty item in
my book. Flour is milled by the tons and comes out with no additives they
just don't have to go the extra steps of adding other junk to it.
When you can eat Big Macs or Taco Bll burritos for a week, cheaper than
you can buy a five pound bag of additive free flour, something is
dreadfully wrong with that picture. But hey if everyone is healthy then
they're alert, clear minded, and aware. And I guess with the efforts
whomever has gone to, to make sure we're all mass medicated and poisoned
without consent, that is the very thing they don't want. An aware, alert,
and healthy, clear headed, thinking population.
Yeah, I know I sound like a cynical conspiracy nutjob. LOL.

There is also an "economy of scale" factor to consider. What everyone
is using therefore costs less. The "specialty" item costs more.
