Speaking of straining the product, I have been filtering each batch using a coffee filter as you recommended in your instructions. This seems to produce a very clear product, but I have read comments on this site indicating that the coffee filters can cause contamination and also allow larger particles to pass through (meaning larger than colloidal size). So....are you sure that this method is OK??  Would unbleached filters be preferable?
