copyright isn't about use of information, it's about the right to copy
that information.
if the information is only copyrighted, then my guess is that there's
probably little you can do except sue the ex-employee for copyright
infringement. if the other company is just using the information (but
not copying it) then they're probably not doing anything wrong...or it
would be very hard to prove that they're doing anything wrong. but i am
not a lawyer, so don't believe me, i'm probably wrong - go speak to a
lawyer.

speak to a lawyer, they can advise you on that.
apart from listening to advice which says "speak to a lawyer", i would
be very hesitant about acting on legal advice from a bunch of geeks -
you don't rely on a lawyer for technical advice, and you shouldn't rely
on a geek for legal advice. in short, while people here may wish to help
you, we're not qualified to do so...you've turned to the wrong forum for
advice.
also, you can't get decent advice without telling the whole story and it
would probably be extremely foolish to post the details publicly at this
stage.

speak to a lawyer. they'll be able to advise you on what you can and
can't do, and outline possible courses of action for you - that's their
job: you pay them, they advise you and act on your behalf, and they're
obliged to act in your interest.
