I'm not 100% sure what you mean by what 'the main case uses are' - I just use it to do exactly what it says it does! It's just a flexible and intuative way of working. For example: if I've made a rig control that floats outside some geometry, but I want it's pivot to match an object I have in the rig already (maybe a bone it's meant to control... something like that). I can make and shape the control curve how I like, turn on Centre mode, do a Match Transforms to that object and hit Freeze. Very quick and very easy to do.
