Biggest problem is how do you hold the flappers open for the test and how
you set up the pitot gauge. The 5 inch discharge may not have enough
velocity to measure accurately on the pitot gauge.

Is there any thing "wrong" with using 5" Storz-type connections for a fire
pump test header in lieu of the standard 2-1/2" hose valves?
