Chris: There are UL listed bulkhead fittings or seals that are intended to seal the penetrations of pipes into hoods and ducts in kitchen installations. See NFPA 96 and UL Directory. I know that Ansul sells them and maybe makes them. Maybe not your problem, but something to consider is who is going to do the ITM on the sprinklers once installled. Your typical 25 inspection "from the floor" is not going to do it and your fire extinguisher contractor who typically does the systems in hoods (albeit 17A wet chem systems) is not going to mess with sprinklers. Consequently, there is a high probablity that the sprinkler installation will not get any attention until after the fire which burns out of control and the finger-pointin' starts in earnest.

We haven't done one in at least 10 or 15 years. My concerns are sealing the penetrations especially in the duct (I can pipe around the hood w/o penetrating I guess).
