Chris, Penetrations of the hood are probably the least of your problems if there is a fryer (but Dave covered that part already). MN allows the use of EA-1's if you can find them. I don't believe they are listed for that use anymore and in the temperature range you need they need to be replaced frequently (annually?). Where have they been stored for years and will that be a problem?
More importantly though, they had a very limited listing for height above a fryer and it was very difficult to install them within their listing anyway.. Not a good idea IMHO.
