My Acer Aspire One is two years old, came with: Linpus; 1Gb RAM; 120Gb HDD.
It's never had a problem running the full desktop Ubuntu. Some of them at
that time did come with 512mb RAM in which case I would upgrade to 1Gb and
go from there.
