Liam - back in the days I was using a 7300/200 (in stock form with 128MB made up of 32MB DIMMS, interleaved) as my desktop, it took some months of research & fiddling to determine that interleaving was causing my file sharing to stall for periods of up to 60 seconds (got the clock appearing) on Mac OS up to 9.1 Once I did actually de-interleave, I found that the whole machine performed better, so my advice would be to disable interleaving & forget it. Some 7300s don't exhibit this behaviour, so perhaps they have a different motherboard revision or something. Interestingly, I found that interleaving on the 7600s I have here doesn't seem to make a blind bit of difference. One problem I do find though is that OSX 10.2.3 has no problem operating as a client, but the ethernet interface shuts itself down when I try to pull files from it using file sharing, but putting files on it doesn't seem to break it. Only a restart seems to fix this problem - not related to yours though.
Does adding one unpaired DIMM disable interleaving for all of them? Does anyone have interleaved RAM working? Does it work with OS X, which is notoriously fussy about RAM?
