There isn't, in fact, anything else you're missing.

On a 7500, Mac OS X needs a minimum 604 cpu, so your 604e is fine. If all you really want to do is to run iTunes and use ITMS, what you've got will do the job.

But your 604e can't run OS X Jaguar or later. So you need to stick with 10.1, patched to 10.1.5 for best effect.

The minimum cpu for OS X 10.1.5 is the 120 MHz 604. This is, umm, not very fast.

The minimum RAM for installing and running OS X is probably about 48 MB. This would be exceedingly slow. 64 MB is just about usable for experiments. 128 MB is okay for light use as you have indicated you want. (In the past, for experiment, I have installed and run OS X 10.1.5 on a 64 MB 150 MHz 604 machine, so I can confirm it runs without fault, but also without swiftness...)

Unless you secretly desire to run additional things other than iTunes, or wish to run Classic alongside OS X, I'd stick to what you've got and save the money for a new machine in due course.
