My experience with the NuBus Macs was:
1. The PDS video was surprisingly fast
2. The DRAM video was okay
3. Sticking in a PDS G3 card negated the PDS video (since you have to pull the video-card) - unless you tried to use a passthrough slot adapter (which gave me endless hell).
4. But sticking in a PDS G3 card boosted the DRAM video a heap.
5. Relying on a 5 MHz SCSI-1 disk bus slowed everything anyway.
Since the NuBus could only feed a graphics card at 10 MHz, but the PDS was driven at cpu bus speed, even a good graphics card like a Thunder was disadvantaged compared with non-NuBus video.
Since I commonly run OS X from the biv of 7500s and similar, I guess I'm less picky about graphics speed than some folks.

I have had several 7100s over the years and after 1998 they all had G3 cards. These macs are usable for many things but not OSX even if you could get past the NUBUS issues.

But I wouldn't recommend spending money on such an enhancement without some very good reason. The future lies with OS X and open source UNIX, and I think that's where your money should go.
