Hi,
Outlook Classic doesn't sync any mails to Microsoft.
Exchange Activesync protocol is baked natively into most mobile operating
systems,
absolutely no need to use the Outlook app, it just works out of the box,
even on old Android 4 handsets. Same goes for iPhone.
No data exchange with Microsoft or the mobile phone OS vendor. So I don't
understand your point.
EAS is just another protocol like IMAP or CalDAV but with some extra
features (as said, I think it's a bad protocol by design, but we have what
we have).
