Compared to text entered on a keyboard, text entered in a mobile device tends to be more poorly worded, misspelled, etc. The notice about the device acts as sort of an apologetic qualifier for the quality/brevity of the message. For others, it's because they are proud of the technology they use. If I think that the Windows Phone 7 is the greatest thing since sliced bread, I might want to give a shout-out to it in my email footers in the communities that I frequent.
