All,
After talking with several Apple tech support people, both at an Apple
Store and through Apple Care, I think I have finally solved my issue.
I talked with a tech support representative last night who said that
in the current setup, one is unable to have both Apple Music and
iTunes Match turned on at the same time. Apparently it is either one
or the other. Once I turned Apple Music off from settings and then
synced my phone, I was able to see all of my music once again. I don't
know why this is just now happening to me, since I have somehow
managed to make both services work up until now, perhaps it was
something on Apple's end which allowed them to coexist. Whatever the
case, the tech support person said that this was a known issue and
there were other people who experienced the same sort of issue of
their music disappearing from their devices after Apple Music started.

With that in mind, I am going to look into keeping my music on my
phone and keeping Apple Music. I do have a few albums which are not on
Apple Music, but by and large, I can likely find a majority of the
songs and albums from my collection on Apple Music. Given that I can
add songs through Apple Music to My Music and add them to playlists,
that should work for me. Plus, I'm not thrilled about turning Apple
Music off in order to see my own songs.

Thanks to everyone that offered help with this issue. Hopefully my
experience will help someone else at some point.
