If you accidentally tap on the incorrect button, it will update over night.

I think it's always better, to delete the downloaded update.

When I got my first iPhone, and when I got a notification I had an update, I 
tapped on the later option, and sure enough the phone did download the very 
next time I turned on my phone!  My point, be very careful if you don't want to 
update right now, about the later option though.

I'll delete my update again.  I think 2 gigs for an update is rather large 
myself.  I just always go to not now, and remind me later.
Hopefully, my phone won't update by itself.
