Your three finger up swipe was interpreted as two fingers. Two of your fingers were too close together.
Go to settings, general, accessibility, Voice-Over, practice area, and practice all of the gestures. You will find that practicing the gestures until they become automatic will make your iPad experience much better. I have people I train practice gestures for the first half hour to hour of training. I know when they are ready when I say a gesture and the person does it correctly all the time, and the person is able to tell me which gesture is used to perform random commands that I ask. In the practice area, VO announces what the gesture is that you just used.
