In the past, I've used DVD Audio Extractor to rip the audio from my DVD's. I think you can use it to capture the video as well into multiple formats. It is not free, and I used it under Windows. I'm not sure if there's a Mac version or not, but I suspect there is since I think I also heard about a Linux version as well.
