If your Soundbar has a digital optical input you should be able to run a tosslink optical cable from the optical output of the Apple TV to the optical input of your soundbar. I am not sure why soundbars even use HDMI since HDMI is for video and autio in one connection and you only need to send audio to the soundbar. Most soundbars I have seen have an optical input which you connect to the optical output of your TV and some maybe have some analogue inputs. I guess the primary purpose of a soundbar is to replace the TV speakers which is why many of them just have an optical input which connects to your TV and the TV becomes your hub for all your devices.
