I don't know how you could be seeing anything but the 7.2 headers if you're
actually using the SUNWxorg-mesa from this build, since they are not included
anywhere in it.

Are you perhaps confused by the Mesa project's standard of listing the version
number in which a header was changed, and not updating them every release to
the current version number?

For instance, in Mesa 7.2 headers, I see:

GL/amesa.h: * Version: 3.3
GL/dmesa.h: * Version: 6.1
GL/fxmesa.h: * Version: 4.0
GL/ggimesa.h: * Version: 4.0
GL/gl.h: * Version: 6.5.1
GL/glfbdev.h: * Version: 6.5
GL/glu_mangle.h: * Version: 3.0
GL/glx.h: * Version: 6.5
GL/glx_mangle.h: * Version: 6.5
GL/mesa_wgl.h: * Version: 3.1
GL/osmesa.h: * Version: 6.5
GL/svgamesa.h: * Version: 4.0
GL/uglmesa.h: * Version: 4.0
GL/wmesa.h: * Version: 3.0
GL/xmesa.h: * Version: 7.1
