Just get the minimum spec, buy two 3.5" SATA-II disks (I guess the sweet spot is 750GB right now), and buy 8GB of third party memory to max out the box for ZFS. Then set up a ZFS-rooted Nevada and you're in business. Depending on your requirements, you have slightly over 1.3TB capacity, or about 690GB mirrored. I have just such a machine and am very happy.
