On both operating systems asterisk runs solid; for many people the
decision comes down to comfort and familiarity with the os.
Ubuntu is Debian based, centos is RHL based. Do you like yum or apt better?
Both are extremley flexible.
If you wanted something with more packages however, Ubuntu has really
gained a large crowd and is being well supported for many things.
All in all though, your building a phone system not a desktop. Figure
out which one your more comfortable in.
There are more hardcore views and points to take into consideration
based on the multitude of requirements scenarios, however I hope this
aids you.
