There's a virtual filesystem on Linux called mp3fs. Using this you can
have just one set of real files in FLAC yet they can be presented as
MP3 files virtually. They are only decoded from FLAC and encoded into
MP3 when they are accessed. All tags are preserved.

I've used mp3fs on Linux successfully (and it works with Samba too, so
you can export the virtual mp3 files across a network). It might be
worth trying out with iTunes, but it depends what kind of things iTunes
does to files in its library...not sure.
