Without knowing the exact layout and way the space tends to be used(
where people gravitate and so forth), it's all a guess.  Is the goal
even distribution across the whole span or are there some specific ares
who's layout might support a stereo arrangement?

Wiring for mono can work, or in fact you can buy outdoor mono speakers
-- usually two tweeters, a single woofer and l/r inputs.   If the
speakers are to be mounted nearly 20 feet hIgh, a rough minimum of 14
ft from the nearest head but likely more as their out from a wall,
you'll likely begin to lose a lot of separation anyway.
