I think David has a tutorial on this.  Check the home page.
But here is the simple form:
Open Windows Explorer.
Find the files you want to back up, and highlight them.  Copy them to
clipboard.  Control C.
You can highlight multiple files and folders, up the the capacity of the
disk or drive you are putting them on.
Then, using Windows Explorer, go to the CD Drive, or DVD drive where you
have your disk inserted.
You do need to have recordable media for this.
Or go to the flash drive, which might be called, removable storage.
Open it, and when you are in list view paste the files.  Control V  
You may have to go through a menu that invites you to name the disk,
which you don't have to if you don't want to.  There may be a couple
other options, such as allowing you to make more than one disk with these
files on it.
If you have quite a lot of material, it could take a few minutes to copy.
If you have more material than the disk will hold, JAWS will tell you. 
Then you go back to the beginning and select fewer files until you get a
manageable amount of material.
